The shower smiles in a politician.Made Rasmalai for the first time at home and it turned out real good.
- 2.5 liters of milk
- 4 tbsp lemon juice
- Pistachios chopped
- Kesar 4 to 5 strings
- 1/2 tbsp haldi (instead of usining lemon colour)
- 2 cup sugar

Ingredients:
- 2.5 liters of milk
- 4 tbsp lemon juice

- Kesar 4 to 5 strings
- 1/2 tbsp haldi (instead of usining lemon colour)
- 2 cup sugar
Procedure:
- Boil 1 liter of milk in a pan and reduce it to 1/2 liter. Add Kesar, haldi and 1 cup sugar and mix well.
- Keep the milk mixture aside.
- Dilute the lemon juice in 1/2 cup of water.
- Now boil the rest of the milk. Once it starts boiling, add the diluted lemon juice to it.
- Milk will start curdling. Take the muslin cloth and strain the crudled milk and run some cold water over it.
- Squeeze the excess water out of it and tie it to the tap of the kitchen tap(make sure your kitchen sink is neat and clean)
- After 1/2 hour. Take out paneer from the cloth and put it an food processor.(this will reduce the time of rubbing the paneer)
- Make desired size of patties and keep aside.
- mix sugar and water in a pressure cooker and bring to a boil.
- Add the rasmalai patties to the water and cover the lid of the pressure cooker.
- Switch off the gas immediately after 1 whistle. Set the timer for 5 mins, remove the lid and add the rasmalai to the milk mixture.
- Garnish with the pistachio. And refrigerater for 2 hrs before serving.
